Gluten Free/Casein Free Chocolate Chip Cookie Recipe

Another recipe I found and tried this weekend was for a homemade Gluten Free/Casein Free Chocolate chip cookies.

Let me first say that these are delicious! We had all the ingredients on hand, believe it or not! Who has xanthan gum in their kitchen? We do! From previous attempts at GF baking.

Grandma's GF/CF Chocolate Chip Cookies

1 cup Earth Balance 100% vegan margarine
1/2 cup sugar
1/2 c. brown sugar
2 tsp pure vanilla extract (we make our own)
2 eggs
2 c brown or white rice flour
1/2 c sweet rice flour (you might substitute with tapioca flour)
1 tsp. baking soda
1 tsp. GF/Aluminum free baking powder (we use Hain's)
1 tsp. xanthan gum
1 tsp. salt
1/3 pkg. enJoylife foods semisweet chocolate chips (GF, dairy & soy free)

Mix ingredients. Put on greased cookie sheet. Bake at 350 for 8-10 minutes. Makes 3-1/2 dozen cookies. Make small ones, the baking powder does make them larger!

Cost is approximately 25 cents per cookie. We have been paying 50 cents per cookie for Pamela's brand. They are $4.99/box of 9 cookies. Yes, this is correct! Now I just have to figure out how to incorporate more baking into my already hectic weeks!
